Avocado Wraps - 2
semi-ripe avocados - 1 tbsp lemon juice - 1 cup celery, diced finely -
1 cup raisins - 1/2 cup chopped walnuts, toasted (350F for 5 minutes) -
1/2 cup mayonnaise (or vegan nayonaise) - 12 large soft
tortillas
Peel, pit, and chop the avocados into small pieces, Sprinkle
with the lemon juice. Add the celery, raisins, and toss with the mayonnaise.
Just before assembling the wraps, add the toasted walnuts and mix. To assemble
the wraps, put a dollop of the mix in the middle of the tortilla. Turn in the
ends, wrap and secure with a toothpick. Makes 12 wraps. |
