Soy of Asparagus Soup

- 1 lb asparagus cut in pieces
- 3/4 cup salted (1/2 tsp) water
- 1 cup soy "milk"
Cook the asparagus in the salted water until tender (8-10 minutes.) Blend the asparagus and 1/2 cup of the cooking water in a food processor, then add the soy "milk". Return to the stove to warm and add 2 tbsp. of margarine. Add some croutons, if desired. Serves 4.
