Tofu
Cacciatore Tofu can be used to replace chicken in many
traditional dishes. It, of course, does not need to be cooked as chicken does,
but just added close to the end of the cooking time. Following is an example of
replacing chicken with tofu.
- 4 tbsp (60 ml) olive oil - 1 package firm tofu,
cut into cubes (press tofu between paper towels to remove the
moisture) - 1 shallot, chopped - 1/2 cup (120 ml) chopped onion - 1/2
cup (120 ml) chopped green pepper - 1 can (7/12 ounces, 225 ml) tomato
sauce - 2 cups (480 ml) canned or fresh tomatoes - 1/4 cup (60 ml) red
wine vinegar - 1 tsp (5 ml) salt - freshly ground pepper - 1/4 tsp (2
ml) dried thyme - 1 bay leaf
Cook the shallot, onion, and green
pepper in half the olive oil until the onion has softened. Stir in the
remaining ingredients (except the tofu), cover and simmer for 30 - 45
minutes.
Meanwhile, brown the tofu cubes on all sides in the remaining
olive oil over a medium heat. Add the tofu to the sauce for the last 10 minutes
of cooking. Remove the bay leaf. Serve with rice. Makes 4
servings.
