Back-to school lunches

Following are some ideas for healthy veggie sandwiches for your kids to take to school (or maybe for the adults to take to work.) These sandwiches use mock meats (much less fat, fewer calories, and no cholesterol.) Mock meats have come a long way in the last few years and are very close to the real thing in taste and texture.
  
  

Sandwiches

Tofurky Deli Slices on a Kaiser

- 1 pckg Tofurky Hickory Smoked Deli Slices
- Kaiser rolls
- margarine or butter
- chopped red onion
- mayonnaise or Nayonaise (vegan)
- lettuce
- salt and pepper to taste


Kids' Croque Monsieur

- 1 pckg Yves Veggie Ham Slices
- croissants (store bought)
- mustard
- cheese slices (real or veggie cheese)

Mock Salami on Ciabatta

- 1 pckg Yves Veggie Salami Slices
- ciabatta loaf (large)
- margarine or butter
- lettuce
- mustard

Mock Chicken Salad on Sourdough

- 1 pckg Yves Veggie Chicken Tenders
- 2 tbsp (30 ml) vegetable oil
- sourdough bread, lightly toasted
- butter or margarine
- 2 stalks celery, finely chopped
- 4 green onions, chopped
- 4 tbsp (60 ml) mayonnaise or Nayonaise (vegan)
- 2 tbsp (30 ml) chopped sweet pickles
- 1 carrot shredded
- salt and pepper to taste
Sauté the veggie chicken tenders for a few minutes in the vegetable oil and let cool. Mix with the last six ingredients and assemble the sandwiches on the sourdough.
